Research and food culture

ANIMOR Research Centre

Research that places olfactory perception at the centre of how food and places shape our experience.

From past to present

Research that becomes cultural hospitality

The ANIMOR Research Centre began with an investigation of Giambattista d’Este, the duke who became a friar between the sixteenth and seventeenth centuries. His story opens a reflection on court and monastery, nature and food culture.

The research explores olfactory perception, memory and the ways our senses connect us with the world. The Observatory on Smell studies their languages and meanings.

This work gives rise to cultural hospitality: experiences and encounters connecting research, place, food and perceived wellbeing.
